In Ecuador, I now encountered not one but two different types of empanadas from those normally found. The first one I presented two weeks ago was 'de verde', the dough was made of green plantain bananas. This one is made out of flour but it's enormous (15 cm long, 10 cm wide and 2-3 cm thick). It's mostly air inside, with a filling of cheese, chicken or carne (beef). It's also very good... but very high on carbs and low in proteins.
